Gourmet Potatoes

Ingredients

  • 6 Medium potatoes
  • 2 cups shredded cheddar cheese
  • 1-1/2 cup sour cream
  • 1/4 cup butter
  • 1/2 cup onion (chopped)
  • 1/2 cup chives or green onions (chopped)
  • 1 clove garlic (minced)
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • smoked paprika

Directions

1. Bake unpeeled potatoes until almost done. Cool and peel. Or don't peel: I prefer to leave them unpeeled.
2. Slice (1/4" thick) or cube (1/2") the peeled or unpeeled potatoes. I prefer cubed.
3. In a separate bowl, combine the rest of the ingredients and stir well.
4. Fold potatoes into the cheesy-deliciousness mixture.
5. Place into a greased casserole dish. Sprinkle with paprika.
6. Bake at 350° for about 1 hour, or until bubbly and potatoes are completely done.
