Potato Salad


  • 4 – 5 lb red potatoes (boiled and diced)
  • 1 Medium onion (finely chopped)
  • 6 hard-boiled eggs (chopped)
  • 1 cup pickle relish (sweet or dill, which will obviously determine the flavor of this potato salad)
  • 1-1/2 – 2 cup mayonnaise
  • 1 – 2 tablespoon mustard (flavor up to you, will also, obviously, greatly affect the overall flavor. Cheap yellow mustard gives it a nice, old-fashioned taste.)
  • 2 teaspoons Mrs. Dash (if you don't use this, you'll need more salt and other spices)
  • 1/2 teaspoon salt


1. Combine all the ingredients.
2. Chill for at least a few hours.


Keep in mind that Diane wrote this from memory, so adjust seasonings to your taste. I usually add a couple of tablespoons of cider vinegar.
