Snickerdoodles

Snickerdoodles
 
Classic soft, white cookie. Great for summer.
Ingredients
  • 1 cup shortening (I use part butter, but using only butter will make them dry and crumbly)
  • 1-1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla (or 1 teaspoon lemon extract)
  • 2-3/4 cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar (to roll cookies in)
  • 2 teaspoons cinnamon (to roll cookies in)
Instructions
  1. Cream together shortening and sugar.
  2. Mix in eggs and vanilla or lemon extract.
  3. Mix in dry ingredients.
  4. Roll into 1-inch balls.
  5. Combine 2 tablespoons sugar with 2 teaspoons cinnamon in a shallow bowl.
  6. Roll dough in cinnamon and sugar to coat.
  7. Place on cookie sheet about 2 inches apart
  8. Bake at 400° for 8 – 10 minutes, until barely golden. Don't over-bake.
