medium potatoes

shredded cheddar cheese

sour cream

butter
1/2
cup
onion
chopped
1/2
cup
chives or green onions
chopped

clove
garlic
minced

teaspoon
salt

teaspoon
ground pepper
smoked paprika
Instructions
Bake unpeeled potatoes until almost done. Cool and peel. Or don't peel: I prefer to leave them unpeeled.
Slice (1/4" thick) or cube (1/2") the peeled or unpeeled potatoes. I prefer cubed.
In a separate bowl, combine the rest of the ingredients and stir well.
Fold potatoes into the cheesy-deliciousness mixture.
Place into a greased casserole dish.
Sprinkle with paprika.
Bake at 350° for about 1 hour, or until bubbly and potatoes are completely done.
