Snickerdoodles
Classic soft, white cookie. Great for summer.

shortening
I use part butter, but using only butter will make them dry and crumbly.

sugar

eggs

teaspoons
vanilla
or 1 teaspoon lemon extract, or 1 teaspoon of each

flour

teaspoons
cream of tartar

teaspoon
baking soda

teaspoon
salt

sugar
to roll cookies in

cinnamon
to roll cookies in

Cream together shortening and sugar.

Mix in eggs and vanilla or lemon extract.
Shaping the dough

Roll into 1-inch balls.

Combine 2 tablespoons sugar with 2 teaspoons cinnamon in a shallow bowl.

Roll dough in cinnamon and sugar to coat.

Place on cookie sheet about 2 inches apart

Bake at 400° for 8 – 10 minutes, until barely golden. Don't over-bake.
